I’ve wanted to make Toad in the Hole ever since I read a British children’s book that referred to it – maybe at age 11 or 12. The name fascinates me! Recently I saw a grilled cheese sandwich topped with Toad in the Hole. What could be better than that? One more check mark on the bucket list!! Curried Egg Salad Sandwich
Egg salad is my very favorite sandwich -- as I have mentioned a time or two. But even favorites need a new twist now and then. I like curry as in this Curried Chicken Salad. Mixing the two together in a Curried Egg Salad seemed the perfect marriage. I happened to have light and fluffy Kaiser rolls from my favorite grocery bake shop. A croissant would be great complement to egg salad, too. I already had hard boiled eggs. Click the link to find instructions to make the easiest perfect hard boiled eggs. Use older eggs if you keep several dozen on hand as I do. Older eggs will peel much easier than the most recent ones. Mix the dressing first so the flavors can begin to meld. Slice and dice onions and celery, respectively. Stir them into the dressing so they are well ... [Read More]
Jazzy Grilled Cheese Sandwich
Grilled Cheese is a quick and easy lunch by itself or in combination with a bowl of soup. A classic. But sometimes you want something more than classic and the same ole, same ole. Jazz up your grilled cheese sandwich with a little something extra and it soars to the next level. Make it several somethings extra and lunch becomes legendary! To build this flavorful sandwich, use a good quality bakery bread for the foundation. We like sourdough bread for its texture, taste and because it does not impact blood sugar as much as do other breads. One of the groceries in town makes great sourdough in two sizes – a six inch diameter circle and an 8 inch circle loaf. One slice of cheese covers the smaller loaf, but the bigger one needs a slice and a half and sometimes 2 slices. I just ... [Read More]
Beer Barbecue Chicken Sliders in the Slow Cooker
Slow Cooker Barbecue Beer Chicken Sliders are so quick and easy! The hard part is when you start smelling that heavenly odor and know you still have to wait for it to finish cooking. Make it the night before and let the chicken breasts marinate in the sauce overnight, before popping into the crockpot early the next morning. It’s what’s for lunch! I served this on Hawaiian Slider Rolls, which are perfectly kid sized. Or Charlene sized. Though I did split one in half to share with Wheels so as not to leave any good thing behind. For extra flavor, butter the buns and toast them in a large skillet just before adding the filling. This is also a good recipe to make ahead and freeze so you have one waiting in the freezer for those evenings you need a quick dinner. Pop it in the ... [Read More]
Gumbo Sloppy Joe Sliders
Creamy Gumbo Sloppy Joe Sliders are a great addition to the appetizer table for Game Day. Or for any party! They are delicious, filling and different from the usual. Slider means you still have room to sample other goodies – and circle back for more Sloppies! They are tasty and amazingly easy to make. Saute onions and brown the ground beef in the same skillet. Mix the two soups together in a medium bowl. Just the soups straight from the can – no other liquid needed. Add the soup to the meat and onion mixture in the skillet and bring to simmer. I simmer a few minutes to let the meat absorb the moisture and flavor. Any excess moisture is also reduced. You don’t want the sloppy joes to be --- “soupy”. Sorry – just had to do that!! Choose your favorite slider bun – Hawaiian ... [Read More]
Tuna Melt — Air Fryer
Tuna Melts were the first thing I made in my new air fryer. I wasn’t expecting to buy one last Saturday – especially at the Kiwanis Garage Sale. But there it was on the Silent Auction table, reserved for brand new products from members or sponsors. I picked a random number and three hours later the air fryer was mine. The Tuna Melts I made for lunch today were delicious. I hope that is a good omen for my ownership!! Start with a good tuna. Usually that means a little more expensive – unless you can find a store brand that is just right. Another random find one day when the store had run out of the national brand that was on sale. Serendipitous because the substitute is so much better and actually costs less! I used mounding tablespoons of mayonnaise because I didn’t want the ... [Read More]
