Appetizers like this Fresh Veggie Pizza are often associated with football. In our neighborhood, you can always tell when the state college team is playing. If it’s a home game, the neighborhood is forlorn because everybody is downtown in the stands. If it’s televised, the suburban quiet is punctuated by roars from living rooms and garages painted in team colors. Today fans are celebrating a national championship. (Guess what colors those garage walls are painted! Buckeye, of course!) Whenever football is played, tables are laden with food. All kinds of food. To sustain the spectators who are putting so much of themselves into coaching, replaying and predicting the game. To soothe the wounds when the coach (one who actually gets paid), the player on the field, or the insert ... [Read More]

Baked Sausage Stuffed Peppers
Baked Sausage Stuffed Peppers are a favorite because the recipe does not have tomato sauce – just the flavors of meat, vegetables and cheese. This recipe is also versatile. It was 11 degrees out the day I made this. No way was I setting myself in that cold car so I used what I had on hand – sausage, Birds Eye Wild Rice (microwave in the bag mix with broccoli and carrots) and Colby Jack cheese. Using sausage eliminates the need for other seasoning, but you can also add your own seasonings to ground beef. For us that would be salt and pepper , maybe a bit of minced garlic. You can see that sausage is a flavor boost for our household! (Sad isn’t it?? I’m working on it!) I’ve not used the wild rice mixture before but the mixture did just fine and we had the benefit of the bits of ... [Read More]
Mock N Cheese aka Cauliflower Gratin
Cauliflower au Gratin -- cheesy goodness as a main dish or a side dish. Cauliflower, Mark Twain once sniffed, was nothing but cabbage with a college education. Boiled and buttered, the way grandma used to do it, cauliflower was nothing to write home about. Now it is everywhere. Cauliflower first appeared on vegetable trays, in snack packs and anywhere a crunch was needed. Then low carb dining became important. Cauliflower is only 5 carbs per serving and it's somewhat bland flavor and good texture makes it an acceptable substitute for potatoes, pasta and rice. This classic au gratin recipe makes a substitute for Mac n Cheese. Mock N Cheese! My sister, Vee, told me it was not a good name if I had to explain it. First she hinted ever so diplomatically with a laugh and a hmmmm -- or ... [Read More]
Sunny Broccoli Salad
This great recipe for Broccoli Bacon Salad comes from a wonderful cook in Missouri. I led a group of volunteers, 10 adults and 21 teens, to Ste. Genevieve, Missouri where we did repair following a flood. The days were long, hot and sweaty, and everyone worked hard. Millie had a fantastic meal waiting for us each night when we returned to the church basement where we were staying. When I saw her mixing up this salad one afternoon, I thought “uh-oh, those kids will never eat this.” They did and came back for more. It is that good! Millie gave me the Broccoli Salad recipe and a piece of advice. Approaching her eighth decade of life, her days were amazingly productive. She told me: slow and steady – don’t ever rush. You never get things done right and you just wear yourself out. ... [Read More]
Cauliflower Bacon Salad
Cauliflower Salad? Cauliflower Bacon Salad? Candy – just pure candy! This is so good you will ignore everything else on your plate. It’s supposed to make four to six servings depending on the size of the cauliflower head. However, if Wheels and Bytes get to it before I do, they divide it in half and inhale. You can add grape tomatoes if you want, but why mess with perfection? Nothing more to be said! Go! Make some! You’ll be glad you did!
