White Chocolate Cranberry Cookies are a pretty addition to the table, with the contrast between the deep red berries and the white chocolate. They are deliciously just right sweet. I was afraid they would be on the tart side – not true. Cut each cranberry, though. I cheated and put a little hand full of very small ones in whole. THEY were tart -- if you are a tart avoider like me. Bytes said, when he bit into a little whole cranberry, "that had a burst of zing!" Those that were cut without regard to size of the berry, just blended nicely into the overall flavor of the cookie. Use a cookie scoop to make uniform cookies that will bake evenly. The cookies won't spread a lot as they bake so you can space them about an inch apart. The added drizzle is a nice touch. Use the candy ... [Read More]

White Chocolate Nut Crunch
White Chocolate Nut Crunch is perfect for those last minute gifts. It's so quick and easy to make that anyone who knows how to use a microwave can make it in a flash. It's easy to package, in a box, a bag or a jar. It's a wonderful combination of flavors - a little salty, a little sweet and a whole lot yummy! The recipe below is pretty straightforward. It can also be customized. Change out the nuts. I used a package of combined sunflower seeds and pepitas, instead of just sunflower seeds. Then I added a half cup of whole walnuts -- just because. Add a cup of golden raisins instead of the dried cranberries -- or in addition to! I used white chocolate chips, but you can use white almond bark or white candy melts, if you prefer. I used coconut flakes off the shelf in the baking ... [Read More]
Lemon Cookies with white chocolate chips
A light lemon flavor combined with creamy white chocolate and a crisp chewy texture, Lemon Cookies with White Chocolate Chips are a study in contrast and complements. Compliments too, because that’s what you’ll get when you make them!! I’ve mentioned before that I don’t own or use a lot of kitchen specialty tools. I’m a quick and easy cook, as a general rule, so my tools have to fit into the very useful category before I pull them out. And they have to fit in the kitchen drawers. A pastry cutter for cutting shortening/butter into flour was the only “special and limited use” thing for a long time. It was joined by a good digital thermometer a few of years ago that has vastly improved meats served here. Then a cookie scoop wandered in on a sort of whim and was found to be incredibly ... Cranberry Pistachio Chocolate Bark
Cranberry Pistachio Chocolate Swirl Bark could start a new holiday tradition in your family. Warning: It’s addictive and tends to disappear quickly! You can substitute chocolate chips for either or both of the white or dark chocolate. My preference is to use a candy chocolate (Wilton, CandiQuik, almond bark) since it melts better and is easier to work with, especially the white chocolate. Follow the package directions for melting in the microwave. Use a narrow utensil to create the swirls-- the point of a knife, a chopstick, the handle of wooden spoon – and move slowly to allow the chocolate time to flow. Stop when you have a design you like. When you add the cranberries and pistachios, it helps to press them into the chocolate just slightly. I’ve become a fan of non-stick ... [Read More]
White Chocolate Blueberry Cheesecake
When Bytes cousin was visiting several weeks ago, she challenged him to try a recipe for White Chocolate Blueberry Dessert she thought sounded really good. He got the ingredients and “aged” them in the pantry. The fruit was used in another recipe but a second container was later purchased and waiting in the fridge. Then Wheels asked Bytes last Friday if he wanted to come along for a dinner out to celebrate my birthday. He said yes, and then committed to making a dessert for after dinner. It was a celebratory dessert worth waiting for! Bytes tweaked the recipe and took photos of the process – a creative bloggy birthday gift. :-) My sister and mister joined us for dessert later in the evening. Their card said “I wish you a day full of smiles. . . “ That dessert was certainly ... [Read More]
