Eggnog Sandwich Cookies are a unique holiday treat. The nutmeg and ginger sugar topping, the soft cookie, the creamy filling -- all the eggnog flavors in your hand. The dough is soft and a little sticky, even after chilling. Just do the best you can to make round cookies. Flatten them with a drinking glass (patterned bottom optional) dipped in flour so they are even height all the way across. When baking, watch the time so cookies just begin to turn golden when you remove them from the oven. (Some of mine got a little too brown this time!) We really liked them plain, but the filling definitely lifts things up a notch. Wait until they are well cooled before assembling sandwiches. The yield is approximately 72 cookies which will make 36 sandwiches. These are better eaten within a ... [Read More]

Chocolate Chip Cinnamon Crisps
Chocolate Chip Cinnamon Crisps are quick, easy and quite straightforward to make. You’ll be glad you made these! Tips for less experienced bakers: Let the butter soften until room temperature by letting it set on the counter for 30-60 minutes ahead of time. Cutting the stick of butter into slices will help it warm faster. OR do the microwave cheat, put in the microwave at 50% power for 15-20 seconds. Room temperature butter will almost “take your fingerprint” when pressed with an index finger. The butter will still be firm enough to resist your touch, but soft enough to leave the imprint of your finger. If you press and your finger actually sinks into the butter – too soft. Be sure to pack the brown sugar – that is, press it tightly into the half cup measure until it is level ... [Read More]
Chocolate Cherry Shortbread Cookies
Chocolate Cherry Shortbread Cookies are ready to bake in about twenty minutes. About 15 minutes in the oven and they are done. Remove to a cooling rack and go to bed. Seriously, the cookies will taste much better the next day if you let them set overnight after baking. It’s worth the wait, I promise!!! The first time I baked these cookies, the guys inhaled them and said they were good. I wasn’t so sure. But when I tasted them for breakfast the next morning, I was sure. It’s a classic good news, bad news situation. Good news – I was impressed at how quickly I could turn out several dozen cookies. Bad news – you’ll need to wait a few hours for the amazing taste to come to full bloom. I’m usually all about quick and easy, so this Make and Wait is a new discipline for me! For ... [Read More]
Minty Christmas Cookies
Minty Christmas Cookies are fun! Fun colors, fun and easy to make and decorate, fun to make with littles. Best of all, they are fun to eat! Use the paste colors because they give deeper color without adding extra liquid. It’s no secret that I am not good at dipping things in chocolate! (Remember? How not to make peppermint patties and Chocolate covered Cheeseballs) I frosted half of each cookie with the melted chocolate instead of dipping. Requires less chocolate – saves $ and lowers the carb count a tiny bit and is a whole lot easier! Melt about half the given amount if you do this. Have fun! Cherry Almond Chews
Cherry Almond Chews topped with bright red cherries are festive chewy cookies. They are the perfect choice for a cookie exchange – pretty, chewy and won’t fall apart with handling. They also freeze well so you can make them ahead of time. Bonus! Resist the urge to make these cookies bigger than a teaspoonful. Keeping them small allows the cherry to be the star it deserves. Cutting the maraschino cherries in half is the most time consuming part of this recipe – put a whole cherry on top and solve that problem! However you choose, just relax and enjoy the whole process – these cookies are worth it! Cherry Almond Chews Print Prep time 20 mins Cook time 12 mins Total time 32 mins Topped by a bright red cherry, these chewy cookies are festive AND ... [Read More]
