A couple of weeks ago I talked about the mini pumpkins that our neighbor gave us. Cindy left this comment on that Busy Monday post: “Don’t forget that you can also EAT those mini pumpkins, when you’re tired of looking at them! (easiest way is to cut them in half, take out the seeds. Then put cut side down in about 2″ water and put into the microwave about 8 min. Just butter, salt and even a little cinnamon, if you want) Can also cut a circle around the top & hollow them out ~ then cut top down in the water & microwave. Fill with chopped apples & spices ~ then microwave again about 5 min). …. ” Love it and it will make our Thanksgiving feast this year — plus some other really yummy ideas from others who also link here.
