Asian Beef and Noodles
What’s for lunch? Asian Beef and Noodles. This is a colorful, budget friendly stir-fry dish that takes only five ingredients—all of which you're likely to have on hand. Ready to eat in about 20 minutes! Serve with fruit (fresh, frozen or canned – whatever you have available) for a complete meal. I had to raid Bytes’ cupboard to find the ramen. I don’t usually buy it, but he keeps it on hand because he likes it for a snack. Or a meal when he is pressed for time. It was worth sneaking down the stairs, avoiding the laser beam network, dodging under the security camera, giving the guard cat a generous handful of treats to keep him busy, and opening the cupboard door just right to avoid setting off the piercing alarm. Actually, I just asked over the stair rail, “got any ramen?” and ... [Read More]
Gumbo Sloppy Joe Sliders
Creamy Gumbo Sloppy Joe Sliders are a great addition to the appetizer table for Game Day. Or for any party! They are delicious, filling and different from the usual. Slider means you still have room to sample other goodies – and circle back for more Sloppies! They are tasty and amazingly easy to make. Saute onions and brown the ground beef in the same skillet. Mix the two soups together in a medium bowl. Just the soups straight from the can – no other liquid needed. Add the soup to the meat and onion mixture in the skillet and bring to simmer. I simmer a few minutes to let the meat absorb the moisture and flavor. Any excess moisture is also reduced. You don’t want the sloppy joes to be --- “soupy”. Sorry – just had to do that!! Choose your favorite slider bun – Hawaiian ... [Read More]

Hot Roast Beef Party Sandwiches
Hot Roast Beef Party Sandwiches was one of the main dishes I served at two ladies luncheons recently. A hot sandwich was a nice counterpoint for the cold salads and desserts that made up the rest of the menu. They were so easy to make and, most importantly, delicious! The size was just right for guests who were sampling everyone’s contribution. The guys are always happy to dispatch of any leftovers with the “suggestion” I might need to make some of these wonders just for them. Who knows? Some wintry Sunday evening, I just might make these for family supper! I made them the morning of the event, but they could be prepared up to a month ahead of time, assembled and wrapped for baking. Thaw overnight in the refrigerator before baking as directed. I used a package of 12 rolls that had been ... [Read More]
Maple Bacon Pot Roast — Slowcooker
Maple Bacon Pot Roast -- my Mother's Day Gift. Before Wheels and I were married we talked about the things we wanted for our children. One item on that short list was to teach them how to be self sufficient. Wheels share of that goal was to teach our children things like how to change a tire and how not to get lost. (Neither of which belonged on my side of the list. I still can’t change a tire – don’t tell the kids! I can argue with the GPS, though.) My share was to teach our children things like how to cook a meal and do their own laundry. (Let it be noted that Wheels does a great job at those self sufficiency things.) And that is why, when Mother’s Day rolls around I only want one gift. A homecooked meal that I don’t prepare. This year Bytes selected this dressed ... [Read More]
