Skinny Chocolate Cake -- A Pinch of Joy #Decadent Dessert

Super moist Skinny Chocolate Cake is a quick to make decadent dessert.  Five minutes and it is in the oven and twenty five minutes later the cake is cooling on the rack.  That's the longest part of the process -- waiting for it to cool down.  You can pass the time by stirring up the frosting -- another couple of minutes -- and setting it in the refrigerator until the cake is room temperature to touch and you can spread the frosting without making it separate into liquid and less liquid.  Most recipes say the cake should be cool -- but this is a cake that was in a hot oven and is setting in a room that is somewhere in the 70  degree range.  It's not gonna be cool!  :-) I used a dark chocolate cake mix with 24 carbs per serving, water is zero carbs.  Dump both in your mixing bowl,  Add ... Chocolate Andes Mint Cookie Mix — Gift in a Jar

Four ingredients -- two for the cookie mix and two more for the cookies.  How easy is that??  Chocolate Andes Mint Cookie Mix goes together in a flash and is super delicious, too.  You'll want to make the mix for everyone -- and yourself too! Use a wide mouth quart jar.  Add one box chocolate cake mix -- any kind.  I used a devil's food mix that I had stocked piled when cake mixes were on sale.  Pour the mix gently into the jar.  Add a heaping 3/4 cup of Andes Mint Chips.  Add lid.  Print Chocolate Andes Mint Cookie Mix Tags      Add tag and decorate jar to your heart's content.  To make cookies, follow the simple directions.  Chilling the dough makes it easier to handle, especially if you are forming the cookies by hand.  I used a cookie scoop to measure and place cookies on the baking ... Hot Chocolate Mix -- A Pinch of Joy

This is a basic hot chocolate mix. I always make the first batch of the season as soon as the temperature drops so we are ready for the cold weather.  Hot chocolate is also Christmas Eve tradition at our house.  An early supper – a lighter meal than dinner – is always planned.  Afterwards  there is a Christmas Eve play or service to attend.  Then back home, still in our finery, we light the tree and some candles in the living room.  Bytes and his brother used to beg to open “just one present tonight” and then got to choose which one.  They don’t do that anymore.  (Although secretly, I think, they still want to!)  Mostly we just relax and talk with Christmas music in the background.   With hot chocolate in the Christmas mugs, of course.   It's a ritual all ages can appreciate!  If the ... Bytes decided he was in the mood for Grandma Call’s  No Bake Chocolate Oatmeal Cookies. Deep chocolate flavor, textured with oats and coconut, those cookies were a favorite of his.  And of Grandma’s thirteen other grandkids who wandered through her kitchen.   She always had some goodie tucked away for their visits and this was a frequent flier!  When the clink of the cookie jar lid was heard from the kitchen, it was usually a taller grandchild helping themselves and a cousin.   Too close to dinnertime and Grandma would peer around the corner into the kitchen and warn the red handed cookie holder that mealtime was imminent.
