Curried Egg Salad Sandwich

Curried Egg Salad Sandwich - A Pinch of Joy Serve as a salad or as a sandwich!

Egg salad is my very favorite sandwich -- as I have mentioned a time or two.   But even favorites need a new twist now and then.  I like curry as in this Curried Chicken Salad.       Mixing the two together in a Curried Egg Salad seemed the perfect marriage.  I happened to have light and fluffy Kaiser rolls from my favorite grocery bake shop.  A croissant would be great complement to egg salad, too. Egg in a mug – and Ode to Joy

Egg in a mug -- A Pinch of Joy Quick and so easy the kids can make their own!

Have you seen this nifty little way to fix a quick scrambled egg breakfast for one?     Grab a mug or ramekin.  Spray it with cooking oil and line with a piece or two of deli meat.  Break an egg into the middle of the deli meat “dish”.  Poke the egg yolk with a fork.  This is important!  Repeat:  poke the egg yolk with a fork twice to be sure it has a hole in it!   Microwave for 90 seconds.   I like to break it in to two segments – 45 seconds on 50% power and 45 seconds on full power – exact timing will depend on your microwave.  Check to see if the egg yolk is done to the firmness you like.  If not add 10 seconds as often as needed to get it there.  Make a mental note of how long you cooked the egg for future reference.  Because you will want to do this again and again! Spinach Bacon Salad with Lemon Garlic Dressing

A classic spinach, bacon combination with a wonderful new lemony twist for the dressing.  A winner!  Donna brought this to a ladies lunch and was generous enough to share the recipe Spinach needs cool weather to grow so it is most available fresh from September through November and again in the spring from March through May. You can store it in the refrigerator for up to a week.  Spinach is a powerhouse for nutrition. One serving provides almost half the daily requirement  of Vitamins A, B (folates), and C, and a quarter of the iron needed, plus a significant amount of minerals and other nutritional elements.  (Minimal carbs, too!)  Donna used a 1 pound package to serve a group and dressed the entire salad before serving.   I adapted by using a 12 oz package and still had two meals with ...
