Garlic Chicken and Spinach Pizza -- A Pinch of Joy

I loved Garlic Chicken Spinach Pizza!!  I really liked the cottage cheese dollops instead of tomato sauce.    Just the right amount of garlic, and I used tender precooked chicken so less time in the kitchen.   Rolling the  prepared pizza crust thin, reduced the carbs significantly – and we like the thinner crusts on pizza anyway.  It also gave us 12 servings, instead of the 6 it said on the package.  So there was enough for two meals – and was just as tasty the second appearance.   I was the nerdy kid (with my brother) who begged Mom to eat lunch at school on spinach days.  In those days, we could trade food – and Jay and I got ALL the spinach we wanted!  Unfortunately that trait did not pass to my sons.  Bytes liked the pizza – but NOT the spinach.  Oh well, more for me! Cheese and Spinach Stuffed Mushrooms

Cheese and Spinach Stuffed Mushrooms are a delicious, warm, cheesy and filling addition to an appetizer table. You can also serve them as a side dish at a pot luck. Sooo good.  Unless you talk to someone like Bytes who can only mumble “fungus”.  That’s okay – more for the rest of us.  And they disappear quickly so don’t dally in loading your plate. Look for packages of larger baby bellas in your produce section.   Larger mushrooms  are easier to stuff and handle without breaking.  When dicing the stems and cutting the spinach, make the pieces small so they will blend into the mixture evenly.  Italian mix cheese is not available at every store; Kraft is the brand I find most often.  If you don’t find it at your store, use shredded parmesan and romano.   Bake until the cheese is golden ... Spinach Bacon Salad with Lemon Garlic Dressing

A classic spinach, bacon combination with a wonderful new lemony twist for the dressing.  A winner!  Donna brought this to a ladies lunch and was generous enough to share the recipe Spinach needs cool weather to grow so it is most available fresh from September through November and again in the spring from March through May. You can store it in the refrigerator for up to a week.  Spinach is a powerhouse for nutrition. One serving provides almost half the daily requirement  of Vitamins A, B (folates), and C, and a quarter of the iron needed, plus a significant amount of minerals and other nutritional elements.  (Minimal carbs, too!)  Donna used a 1 pound package to serve a group and dressed the entire salad before serving.   I adapted by using a 12 oz package and still had two meals with ...
