A couple of weeks ago I talked about the mini pumpkins that our neighbor gave us. Cindy left this comment on that Busy Monday post: “Don’t forget that you can also EAT those mini pumpkins, when you’re tired of looking at them! (easiest way is to cut them in half, take out the seeds. Then put cut side down in about 2″ water and put into the microwave about 8 min. Just butter, salt and even a little cinnamon, if you want) Can also cut a circle around the top & hollow them out ~ then cut top down in the water & microwave. Fill with chopped apples & spices ~ then microwave again about 5 min). …. ” Love it and it will make our Thanksgiving feast this year — plus some other really yummy ideas from others who also link here. Thank you for sharing my tips about the mini pumpkins and also the recipe for the dog biscuits. I shared quite a few today but a couple were my favorites when I was a kid (in the 50s) ~ The frozen cranberry pineapple salad tastes like ice cream! My grandmother put it on lettuce leaves for Thanksgiving & my mom put it in little cups for Christmas. The Carrot Gingerbread mold was before Carrot Cake had been heard of, and it’s like a cross between carrot cake & gingerbread ~ so I loved that too! I’ve never seen either of those recipes anywhere else before, but I still make them for the Holidays. Happy Fall! Charlene, those mini pumpkins are also great to cook individual serving of stew in the oven. I planted an odd package of pumpkin seeds to have pumpkins for the hens, but we will be processing some of them for puree as well. Thanks for the visit and the link-up, have a great week ahead.
