A Pinch of Joy

Banana Strawberry Blueberry Smoothies

Banana Strawberry Blueberry Smoothies -- A {inch of Joy What do you do with a bag of bananas? Make Banana Strawberry Blueberry Smoothies.  One of the little groceries in town is a great place to find unexpected bargains. Last time I was there, they had just set out bags of perfect golden yellow bananas. I brought one of the bags home with me.   I made Peanut Butter Banana Ice Cream earlier.  Time for a late afternoon snack — refreshing smoothies it is.

I had already sliced and frozen two smallish bananas.  I covered a cookie sheet with parchment paper, dropped the quarter inch thick banana slices on so none touched each other and set the cookie sheet on top of the bottom pullout drawer.  It only took a couple of hours to freeze the bananas.  I shook them off the parchment paper into a measuring cup.  One cup exactly.

Put the milk into the blender first as it will keep the blender moving through the fruit.  I used Fair Life lactose free milk since it only has 6 carbs/. Next add  Greek Yogurt with 9 carbs per 5.3 ounce cup. I like to use coconut flavored greek yogurt because of the depth of flavor it provides.   Add  bananas and blend until smooth.  Then add the other frozen fruit.  My intention was to use all strawberries, but my covid freezer only had half a cup frozen strawberries. I blended them in and  half a cup of blueberries entered the picture.  A teaspoon of chia seeds just for extra nutritional boost.  Viola!  Balanced flavors of banana, strawberry and blueberry — colorful AND tasty!  Refreshing pick me up in the afternoon.  A delicious breakfast — or anytime!
