Our Easter dinner had three attendees – Wheels, Bytes and me. That was okay. We had celebrated a couple of weeks before with a big egg hunt for the littles and a potluck for thirty –ish people at my sister Bee’s home. For our dinner, I planned ham – but glazed ham balls instead of a big ham. Sweet potatoes, green beans, salad, apple dessert and a bunny centerpiece. But something was missing. The dinner needed just a little bit more to make it festive and fun. We couldn’t eat a whole batch of Easter Treats when the recipe was sized for twenty five instead of three. Two of us are low carbers and don’t need candy anyway. Just a Little Bit to celebrate was okay, though. Why should we miss out on a little fun and good cheer? Just a Little Bit sounded just right. You know, ... [Read More]

Festive Peppermint Bark
Peppermint bark is a seasonal favorite everyone loves! This super easy recipe assembles quickly and looks spectacular with little effort. The secret to outstanding peppermint bark is in the quality of chocolate. You can pick and choose – if your crowd is mainly teens who eat quickly and move on, use the easiest available chocolate such as almond bark or melting wafers. If you are gifting pepper mint bark or serving it to, say, your boss and co-workers, anyone who will savor and appreciate the creamy texture and holiday flavors, choose a higher quality. Double Chocolate Toasted Almond Clusters
Double Chocolate Toasted Almond Clusters are so very easy to make and yet look super elegant and gift worthy! Toasting the almonds takes a little extra time and effort, but so worth it for the extra flavor and crunch. Toast them ahead of time, if you want, while baking dinner one night or another batch of goodies. Only ten minutes in a 350 degree oven makes a big difference. When adding white melting chocolate to slow cooker, break into pieces at the score. Or some brands come in little “cubes” in individual cups. Easier to melt than a big chunk. Baker’s German Chocolate is a sweet baking chocolate – also scored to break into easy to melt chunks. The chocolate chips add a different flavor to the mix. I have also used dark chocolate chips--but I like dark chocolate. Use the low ... [Read More]

Crunchy Peanut Butter Chocolate Bars
Valentine's Day has a few traditions around our house. Wheels comes up with beautiful heartfelt cards that make me cry. And sometimes the perfect -- although quite unexpected -- gift. When Bytes and his brother were little I would find something red to gift them -- a red truck, a red book, red handled pliers, red earbuds -- something small and red that fit their interests at the time. And I always make something special to eat. Peanut Butter Chocolate Bars fits right in the special category, from the peanut butter cup bottom to the peanut butter hearts on the top. The peanut butter bar is a classic knock off of Reese's Peanut Butter Cups. Use graham cracker crumbs in the box if you have them on the shelf. To make your own, use 9 sheets (2 squares each) of graham crackers. ... [Read More]
Rocky Road Bars
Rocky Road Bars arrived in a Christmas card envelope. The recipe that is. My cousin sent it with a warning that it made a humungous amount. Storing leftovers in the freezer, she discovered they came out soft and immediately edible--- did not diminish the capacity to charm. The only defense in the effort to avoid total consumption was to gift the candy immediately to someone else. The very large batch issue was easily fixed by cutting the measurements in half and putting it into a smaller pan. I also streamlined the process by developing microwave instructions –giving the potential of making another batch even more quickly. Just in case, anyone missed the other half. And then we sampled the first batch. Keep in mind, I am not a marshmallow fan. But. . . . This is seriously ... [Read More]
