Lemon Mustard Vinaigrette Marinated Chicken on a fabulous artisan bread takes the concept of chicken sandwich to new levels. Sooo good I made it twice in one week – and we aren’t big sandwich eaters!!! Use your favorite artisian bread – sourdough, multi-grain or any round bread that is crusty on the outside and soft in the middle. Ask the bakery to slice it for uniformity. When you seldom eat bread as we do – go for a really good one when you do put it on the menu! I chose an asiago cheese loaf that was excellent. We opted not to toast it, but a little denser bread, like the sourdough, would be wonderful buttered and tossed in a skillet until just barely golden. For one set of sandwiches I used provolone cheese and needed two slices to cover the big sandwiches. For the second ... [Read More]

THE best Pork Barbecue Sandwich
Introducing Hoggers, THE best barbecue pork sandwiches ever. To get the irony of that statement in our house you have to know: Bytes was allergic to tomatoes. He outgrew the allergy somewhere around eighth grade, but I still don’t use many tomatoes in cooking. Barbecue sauce is not our thing either as the preference here is subtle seasoning for meat. So this recipe came about by pure accident! I was buzzing through the grocery with a short list and, as always, on the lookout for bargains. I noted a cart laden with fresh meat being pushed from the butcher shop. It stopped at the area of the cooler designated for markdowns. I picked up two items on the list between me and the meat section. By the time I got to the counter, a small mob had gathered and the cart pusher had given up ... [Read More]
Hot Tuna Sandwich
“What do you want for Valentine’s Day? “ Wheels asked one year. “Mmmm, I don’t know,” I replied, buried deep in the grocery ad in preparation for a supply run. “Oh my goodness, not roses”. I said, looking at the dozen red roses pictured with an obscene figure following the dollar sign. It was approaching three digits before it even got to the decimal. “Growing conditions for roses were really bad this year and there is a big shortage. I heard prices would be high but – wow! I’d rather have this.” I offhandedly pointed to the picture of a case of tuna. And laughed. Then I promptly left for the grocery store. The following Thursday, Wheels left for the day about 5 am, as usual. I came downstairs a couple of hours later. A largish brown box sat in the middle of the kitchen ... [Read More]
Grilled Brie and Pear Sandwich
The grilled brie and pear sandwich caught my eye immediately! Last Thursday, the women on my block went to lunch for our regular monthly get together. We try out new restaurants and visit old favorites. Sometimes we go shopping afterwards or to a movie, but mostly we just talk and catch up with one another. This time we went to a new to us restaurant with a wonderfully eclectic menu. I don't usually order sandwiches but grilled brie and pear just sounded so MMMMMMM! It was indeed! I had to come home and create the spirit of this wonderful melty inside, crusty outside grilled brie and pear sandwich for Wheels and Bytes – and me! Begin with wonderful crusty artisan sourdough bread sliced into eight slabs. Add a circle of brie sliced thinly, a ripe large Bosc pear sliced ... [Read More]
Monte Cristo Sandwich
The Monte Cristo sandwich is based on a similar sandwich called Croque Monsieuer – basically a grilled cheese sandwich. When it appeared in American cookbooks in the 1930’s, it was known as French sandwich. Then someone came up with the idea of combining those two “French” dishes – French sandwich and French toast – into a Cheese Dream Sandwich. The idea of serving it with jelly came from the French Toast connection. King’s Restaurants in Nebraska carried the idea further by deep frying the sandwich and calling it a Frenchee. But it’s real claim to fame was in the mid Sixties when it appeared in Disney’s Cajun restaurant where it was called -- ta da -- the Monte Cristo Sandwich. And here I thought it had been around since one of the King Louis' or at least Napoleon! Now forget ... [Read More]
Grilled Ham and Cheese Sandwich with apple
Grilled Ham Cheese with apples on sourdough bread. Several women from the neighborhood occasionally get together to try new places to eat, maybe shop a little and, always, talk a lot. I was intrigued by this combination at a new to us restaurant, ordered it and have been making it at home ever since! Sourdough bread is a good bread for those who are diabetic. Studies have shown that it does not raise blood glucose in the way that other breads will. Scientists believe that the fermentation process used to make the bread rise produces lactic acid and reduces availability of simple carbohydrates, keeping blood sugars stable. The scale measuring the rate at which a food makes blood sugar rise is called the glycemic index. Anything that is rated 55 or less is considered to have a low ... [Read More]
