Chocolate and Cream No Bake Cookies

Crazy, easy recipe! Buttery soft and creamy no-bake chocolate cookies.

Chocolate and Cream Cookies are a fun addition to a cookie tray.  If you are talking and laughing as I usually am when faced with a cookie tray – we’re talking choices of cookies and chocolate here!! -  you could do a double take.  Not meat, just a fun soft cookie!!  Would you eat it if it were called Salami Cookie? You’ll need two fully packets of graham crackers.  There are nine crackers in each packet.  I didn’t open the packets, just started crushing them with my hands.  Once you get them started, the crackers will breakdown fairly quickly.  Don’t worry about crushing them evenly.  You’ll want some larger pieces about ½ inch square, some nice crumbs and everything in between.  Dump them in the mixing bowl, with 8 ounces of cream cheese (unwrapped) on top to soften slightly. Mix ... [Read More]

White Chocolate Nut Crunch

White Chocolate Nut Crunch -- A Pinch of Joy #Quick&Easy #Last Minute Gift #Gift in a Jar

White Chocolate Nut Crunch is perfect for those last minute gifts.  It's so quick and easy to make that anyone who knows how to use a microwave can make it in a flash.  It's easy to package, in a box, a bag or a jar.  It's a wonderful combination of flavors - a little salty, a little sweet and a whole lot yummy! The recipe below is pretty straightforward.  It can also be customized.  Change out the nuts. I used a package of combined sunflower seeds and pepitas, instead of just sunflower seeds.  Then I added a half cup of whole walnuts -- just because.   Add a cup of golden raisins instead of the dried cranberries -- or in addition to!   I used white chocolate chips, but you can use white almond bark or white candy melts, if you prefer.  I used coconut flakes off the shelf in the baking ... Pumpkin Spice Crunchy Dump Cake

pumpkin-spice-crunchy-dump-cake-a-pinch-of-joy-full-of-spicy-pumpkin-goodness-this-it-better-than-pumpkin-pie

Pumpkin Spice Crunch Cake is  a dessert that gives pumpkin pie a run for the money.  I think it is better than pie – by far!  More texture, more flavor, better looking.  However, everyone is entitled to their opinion and Wheels and Bytes certainly have theirs.  They lean a little toward pie.  But they are not known to turn down dessert of any kind, so asking them defeats the purpose.  Try it for yourself and see what you think.  Scrumptiousness! I like the spice crust and the spice strudel topping.  Actually, they improve with time, especially the crust.  That makes this the perfect bake ahead dessert.  Keep it covered in the refrigerator for a day or two.  Then bring it to room temperature before serving to bring out all the flavor.  A good vanilla ice cream is the perfect ...
