A fritatta is cooked slowly over low heat. Omelets are cooked quickly over higher heat with filling placed in the middle of the omelet and folded before serving hot from the stove. Fritattas are often served at room temperature, making them perfect to make ahead for brunches or larger groups. A fritatta is similar to crustless quiche which makes it perfect for low carb dining or “don’t want to make a crust” meals. They are often prepared in well-seasoned cast iron skillets but you can also use a standard 10” non-stick skillet . This savory stovetop fritatta is a delicious Mediterranean combination, easy to make and versatile. The most difficult part is deciding whether you will enjoy it for breakfast, brunch, lunch, or dinner. Fritatta with Arugula, Portabello and Feta ... [Read More]

Cauliflower Soup with Goat Cheese, Garlic & Bacon
Cauliflower Soup with Bacon, Garlic & Goat Cheese is lunch time quick . Pair it with a crisp, green salad or crisp crusted rolls for a more filling meal. It also makes a nice, light appetizer when served in small portions and garnished with green onion slices. One of the great things about cauliflower is how well it takes on the flavors of other ingredients. In this case, the tangy goat cheese adds an interesting and delicious dimension to the finished result. If you want more robust flavors, roast the cauliflower and onion before blending. The flavor will be more complex, but be aware the soup will take on a darker brown color as a result. Goat cheese is a good source of protein, healthy fats, vitamins and minerals. The fatty acids found in goat's milk have antibacterial ... [Read More]
Peanut Butter and Banana Ice Cream
What do you do with a bag of bananas? Make Peanut Butter Banana Ice Cream! One of the little groceries in town is a great place to find unexpected bargains. Last time I was there, they had just set out bags of perfect golden yellow bananas. I brought one of the bags home with me. Since none of the bananas were over ripe, I figured I would have time to research recipes. Here’s the first recipe I made: Peanut Butter Banana Ice Cream is simple – and supper delicious. Cut up four bananas and freeze till firm. Put frozen bananas in food processor, add the other two ingredients. It does not matter if the peanut butter is creamy or chunky. Any kind of milk will work. Spin until mixed. Freeze again. Yum! Hint: Forget using the blender. You’ll end up with a frozen glob above ... [Read More]
Pecan Snowball Cookies
Buttery and loaded with pecans, Pecan Snowball Cookies are a classic. They are very simple to make -- quick and easy! Use a cookie scoop to keep the cookies uniform when putting them on the baking sheet. Making cookies uniform using a tablespoon depends on your own judgement to keep them all the same size. Mine grow a bit larger with every cookie! Chop the pecans ahead of time with a chopper or food processor. This makes the process, then, just one of measure and stir. Watch closely toward the end of the baking process so cookies don't brown as that will cause them to be dry. Cookies really do need to be rolled twice in powdered sugar. The first coat absorbs oil and moisture, the second coat makes snowballs! Pecan Snowball Cookies Print Prep time 10 mins Cook ... [Read More]
Chocolate and Cream No Bake Cookies
Chocolate and Cream Cookies are a fun addition to a cookie tray. If you are talking and laughing as I usually am when faced with a cookie tray – we’re talking choices of cookies and chocolate here!! - you could do a double take. Not meat, just a fun soft cookie!! Would you eat it if it were called Salami Cookie? You’ll need two fully packets of graham crackers. There are nine crackers in each packet. I didn’t open the packets, just started crushing them with my hands. Once you get them started, the crackers will breakdown fairly quickly. Don’t worry about crushing them evenly. You’ll want some larger pieces about ½ inch square, some nice crumbs and everything in between. Dump them in the mixing bowl, with 8 ounces of cream cheese (unwrapped) on top to soften slightly. Mix ... [Read More]
Bacon Wrapped Bourbon Mustard Pork Loin
Bacon brings this pork loin roast to a whole 'nother level. It's natural saltiness and smokiness adds complexity to the spicy kick of the bourbon mustard. The mustard brand used in this recipe (Stoneridge) has some crushed seeds in the mix which adds more kick and a bit of texture. I chose a thick cut bacon. Each slice is twice as thick as a standard slice of bacon --- mmmore bacon flavor and it will hold its shape better through cooking and slicing. I also precooked the bacon for a couple of minutes to give it a richer color. You don't want to fully cook the bacon because the remaining bacon fat will baste the pork loin as it cooks, keeping it juicy and tender. Don't forget to remove the toothpicks before serving!
