Tuscan Chicken Rice Bowl -- A Pinch of Joy

A delicious meal, ready to eat in about 30 minutes.  You can assemble from scratch which may take a just a few minutes longer at cooking time or freeze ahead of time, thaw overnight and have it ready in a flash for a healthy work night meal.  Add a quick salad of spring greens, feta cheese, a few walnuts and blueberries. Look for chicken breast fillets as they are about half an inch thick and will cook quickly and evenly.  Most stores will carry them, but if you don't find them make your own fillets.  With a sharp knife slice a chicken breast lengthwise into half inch pieces.  Look for chopped mushrooms if you have a "fungus-phobe" like Bytes at your house.  He'll eat chopped mushrooms with little comment, but objects to the bigger pieces.  (We're making progress with that -- lol!)  ... Ginger Orange Chicken Baked Stirfry -- A Pinch of Joy

Tender baked chicken with a delicate orange ginger glaze and topped with flavorful stir fry sauce served atop healthy brown rice with colorful vegetables.  Orange Ginger Chicken Baked Stir can be prepared ahead in about 2 minutes -- 3 minutes tops!  Let it marinate all day (or longer if you want to make it the night before) in the refrigerator.  Come home at night, take the marinated chicken out of the refrigerator, pull the frozen packages out of the freezer, fill the baking pans while the oven preheats.  Microwave the rice and portion out premade salad while the chicken and veggies bake.  Bingo!  Complete dinner in twenty minutes.  Fast, easy AND delicious! Creamy Wild Rice and Chicken Bake -- A Pinch of Joy

Creamy Wild Rice and Chicken Bake is delicious, filling comfort food.  It is easy to assemble in about 5 minutes.   Make the rice mixture in the morning to refrigerate with the thawed chicken in a separate bag.   The minute you walk in the door, put the chicken on top of the rice, add the slivered almonds and it is ready to pop in the oven.  Sit down for the next forty five minutes or put in a load of laundry, clean the cat box, referee homework and sit down for five minutes! Whatever you need to do!  With ten minutes left on the timer, fill bowls with a salad mix from a bag, microwave a steam in the bag vegetable and set out a plate of cookies.  Very happy tummies for not much time invested. Balsamic Grilled Chicken -- A Pinch of Joy

Grilled Balsamic Chicken can be prepared and frozen for serving at a later date – a great make ahead meal.  Or it can be made a few hours ahead of time and left to marinate in the refrigerator for an evening meal.  It has a little bit of balsamic tang to liven up the flavor of a nicely balanced mixture of herbs.  Leftovers (if there are any!) can be sliced, warm or cold,  atop a bed of salad greens for another meal. In a time crunch?  Or missing one of the herbs?  You can substitute 2-3 teaspoons of Italian seasoning for the herbs.   Parsley, basil and oregano are basic in Italian seasoning.   Depending on the brand you will find a combination of other herbs so the flavor will be somewhat different.  But . . .   in a pinch that works!   Measure dried herbs    into your hand and crush ...
