Creamy Parmesan Turkey Tenderloins. -- A Pinch of Joy Creamy Crusted Baked Turkey Tenderloins with a kick

Creamy parmesan crust with a kick blankets turkey tenderloins for a quick and easy baked meal.   Serve with a salad, brown rice and vegetable of your choice for a healthy dinner.  A rice and pasta combination also makes a good side dish and you can pick a flavor to complement the zing of the creamy parmesan crust. Mix together the sauce ingredients.  The seasoned salt provides the kick.  You know I am a wimp so the half teaspoon is plenty for me, but you can add up to a teaspoon if you like.  Slather the sauce evenly over the two turkey tenderloins and bake for about 45 minutes. Chicken Pot Pie is a management dish.  You know, one that uses up the leftover roast chicken and veggies, even gravy,  in the refrigerator.  Have leftover turkey?  Substitute turkey for the chicken – turkey pot pie is great for holiday leftovers.    That’s inventory control.  Or on the time management side, you can bake one and freeze one.  One is for dinner tonight and the other is wrapped in foil and frozen for a dinner later.   Or make and freeze more than one batch as part of a make ahead or once a month cooking project. Monte Cristo Sandwich

A Pinch of Joy: Monte Cristo Sandwich

The Monte Cristo sandwich  is based on a similar sandwich called Croque Monsieuer –  basically a grilled cheese sandwich.  When it appeared in American cookbooks in the 1930’s, it was known as French sandwich.  Then someone came up with the idea of combining those two “French” dishes – French sandwich and French toast – into a Cheese Dream Sandwich. The idea of serving it with jelly came from the French Toast connection.  King’s Restaurants in Nebraska carried the idea further by deep frying the sandwich and calling it a Frenchee.  But it’s real claim to fame was in the mid Sixties when it appeared in Disney’s Cajun restaurant  where it was called -- ta da -- the Monte Cristo Sandwich.  And here I thought it had been around since one of the King Louis' or at least Napoleon!
