Tender and delicious, from Grandma’s favorite cookbook, this is a can’t miss recipe for serving 8-10.   Grandma started with a whole chicken – but you can pick up a package of sliced chicken breast and have it in the oven quickly.  It bakes for an hour, which gives you enough time to scrub 8 medium potatoes and toss them in the oven for an easy side.  Don’t bother to wrap. They all flow together swiftly. Takes less than 10 minutes to put together.  Baking time is only 25 minutes. Baked Tacos -- A Pinch of Joy Choose chicken of beef for quick, easy, delicious tacos!

Baked Tacos are so easy, so quick and so delicious, it almost seems like cheating to have them on the menu. Use precooked shredded or chunked chicken.  Or prebrowned ground beef.   I nearly always have 2 cup bags (1 pound) of both in my freezer because that saves so much time on a busy day.   Either one will make these wonderful tacos a snap to stir together.  Use frozen diced onions to save time instead of chopping a fresh onion.  If you want green chilis, add a small can or buy diced tomatoes with green chilis added.  You already know me – I skipped the additional zip.  Same with the taco seasoning.  I only used half a package.  Prebaking  taco shells turns them into a whispery crunch that is s-o-o-o good.  They are also only 6 carbs each.  Compare that to the 22-28 grams of carbs in ... Quick and Easy chicken Ranch Pizza -- A Pinch of Joy..

A really quick lunch piping hot from the oven, Chicken Ranch Pizza is great for when you want some comfort food - fast and flavorful. Reach in the pantry and raid the refrigerator.   Flat bread or prebaked pizza crust, shredded or chopped cooked chicken, a couple of sliced green onions and a package of cream cheese flavored with ranch dressing mix. Top with shredded cheese.   Viola -- Chicken Ranch Pizza.  From inspiration to table in about 25 minutes. Italian Chicken Breast is a Quick and Easy recipe that is delightfully delicious and so easy to make that it will become a regular on the menu. Thaw the chicken breasts in the refrigerator overnight.  Yes, you can thaw them in the microwave, if you forget.  But it's one less hassle if you think ahead and throw the bag of frozen chicken breast in the refrigerator overnight.  You can get right to cooking after work.  The package of chicken breasts I used were wildly varied in size.  Slice them in a way that will give you relatively uniform thickness.  I laid the breasts on the cutting board and made slices abut 3/4 inch thick.  Those will cook easily with about 5 minutes on each side.  Be sure the oil is hot before adding the meat, dredged in egg and crumbs.  This will make a quick and ...
