Baked Tacos -- A Pinch of Joy Choose chicken of beef for quick, easy, delicious tacos!

Baked Tacos are so easy, so quick and so delicious, it almost seems like cheating to have them on the menu. Use precooked shredded or chunked chicken.  Or prebrowned ground beef.   I nearly always have 2 cup bags (1 pound) of both in my freezer because that saves so much time on a busy day.   Either one will make these wonderful tacos a snap to stir together.  Use frozen diced onions to save time instead of chopping a fresh onion.  If you want green chilis, add a small can or buy diced tomatoes with green chilis added.  You already know me – I skipped the additional zip.  Same with the taco seasoning.  I only used half a package.  Prebaking  taco shells turns them into a whispery crunch that is s-o-o-o good.  They are also only 6 carbs each.  Compare that to the 22-28 grams of carbs in ... Quick and Easy Chicken Ranch Pizza

Quick and Easy chicken Ranch Pizza -- A Pinch of Joy..

A really quick lunch piping hot from the oven, Chicken Ranch Pizza is great for when you want some comfort food - fast and flavorful. Reach in the pantry and raid the refrigerator.   Flat bread or prebaked pizza crust, shredded or chopped cooked chicken, a couple of sliced green onions and a package of cream cheese flavored with ranch dressing mix. Top with shredded cheese.   Viola -- Chicken Ranch Pizza.  From inspiration to table in about 25 minutes. Italian Chicken Breast is a Quick and Easy recipe that is delightfully delicious and so easy to make that it will become a regular on the menu. Thaw the chicken breasts in the refrigerator overnight.  Yes, you can thaw them in the microwave, if you forget.  But it's one less hassle if you think ahead and throw the bag of frozen chicken breast in the refrigerator overnight.  You can get right to cooking after work.  The package of chicken breasts I used were wildly varied in size.  Slice them in a way that will give you relatively uniform thickness.  I laid the breasts on the cutting board and made slices abut 3/4 inch thick.  Those will cook easily with about 5 minutes on each side.  Be sure the oil is hot before adding the meat, dredged in egg and crumbs.  This will make a quick and ... Garlic Chicken and Spinach Pizza -- A Pinch of Joy

I loved Garlic Chicken Spinach Pizza!!  I really liked the cottage cheese dollops instead of tomato sauce.    Just the right amount of garlic, and I used tender precooked chicken so less time in the kitchen.   Rolling the  prepared pizza crust thin, reduced the carbs significantly – and we like the thinner crusts on pizza anyway.  It also gave us 12 servings, instead of the 6 it said on the package.  So there was enough for two meals – and was just as tasty the second appearance.   I was the nerdy kid (with my brother) who begged Mom to eat lunch at school on spinach days.  In those days, we could trade food – and Jay and I got ALL the spinach we wanted!  Unfortunately that trait did not pass to my sons.  Bytes liked the pizza – but NOT the spinach.  Oh well, more for me! Chicken Bacon Biscuit Cups - A Pinch of Joy

Chicken Bacon Cups were nowhere on the radar as the answer to What’s for lunch?  I pondered the question as I stood in the open refrigerator door.  Soup from two days before – but not quite enough for hearty servings.  Hmmm, a can of biscuits.  3 grilled chicken tenders from the dinner Bytes cooked last night.  Half a package of bacon in the cheese drawer.  Cheddar and cream cheese.   The perfect accompaniment to not quite enough soup!  The lunch menu now starred Chicken Bacon Cups. With a little more broth, some mixed vegetables and a dollop of sour cream added atop the somewhat spicy soup it had a fresh perspective instead of a “leftover vibe”.  The biscuit cups were a filling addition and no one realized the chicken had been on the table the night before.  Every good cook has a way ... Slow Cooker White chicken Chili

White Chicken Chili is so easy to prepare in the crockpot.  It is a cold weather boost to come in the house after work to a fragrant ready to eat meal.     Since it makes twelve one cup servings, you may have leftovers for a second meal – bonus!  This recipe also works well for make ahead freezer cooking, too. Make it, freeze it and pull it out when needed.  Versatile and delicious! Beans are a great source of protein, especially in a vegetarian diet.  They are a rich source of fiber and B vitamin as well, as lesser known nutrients as magnesium, phosphorus and manganese.  Beans also have health benefits such as reducing cholesterol, decreasing blood sugar and improving healthy gut bacteria.  They are not low carb, however, so they need to be worked into a low carb diet intentionally.  ...
