This could not be any easier to make. You only need 2 ingredients – a package of Rolos and a couple of sleeves of Ritz crackers. Melting chocolate or white chocolate and a few sprinkles are a bonus. Place the crackers on a baking sheet, add a Rolo in the middle and heat in a 350 degree oven for five minutes until the Rolo is soft. Remove from oven and press a second Ritz on top to sandwich the melty chocolate caramel goodness between the two salty crunchy crackers. Let cool and enjoy.
But you know bloggers always have to take things a little further. Drizzle chocolate on top. I am obviously a novice at that as you can plainly see. However, in my defense it does add that little extra bit of color and, importantly, more chocolate. Here’s what I learned:
Whatever type of chocolate you use for drizzling – chocolate chips, candy wafers, almond bark – you need to have something to thin it with. Shortening and coconut oil are the most called for. Milk or butter or other dairy product will not work. In fact, it makes chocolate sieze – get hard and lumpy according to how much dairy you use. Guess what I did not have?? Yep, shortening or coconut oil. Not even canola oil, which was also recommended. I wasn’t sure the olive oil on the shelf would work. So I soldiered on with chocolate chips without modification. Yeah, well it was past ten pm and really cold and windy out. You would have done the same thing!
Movement is key. See those blops? No movement while trying to get the drizzle started. See the curls? Melt the chocolate in a zipper bag and snip off the corner. Squeeze hard as you move the bag slowly upwards on the crackers. Makes curlicues every time. By this time I was on you tube number 3. Move your whole forearm from the elbow, it said. No wimpy wrist movements. Well, that one worked. The chocolate was still too thick to drizzle from a spoon, but using the zip bag mentioned above, one could achieve a reasonably uniform drizzle with quick sweeps of the arm. Next time I will be sure to have coconut oil on hand! Thin, uniform drizzles will be the goal using dazzling forearm sweeps. In the meantime, these little yummies have all disappeared now! And that tells us – they are pretty darn good!
PrintRitz-y Rolos
This salty and little bit sweet treat is a great addition to your Christmas recipe collection. Dress up with drizzle following the “helpful” hints or serve plain.
- Prep Time: 10 mins
- Cook Time: 5 mins
- Total Time: 15 mins
- Yield: 30 pieces 1x
Ingredients
- 2 sleeves Ritz or similar cracker
- 1 package Rolos (you’ll have some left)
- Drizzling chocolate and sprinkles, if desired
Instructions
- Place one sleeve of crackers facedown on an ungreased baking sheet.
- Place one Rolo on the center of each cracker.
- Bake at 350 for five minutes or until Rolo begins to melt.
- Remove from oven and press a second cracker on top of each Rolo and press down.
- Let cool. If desired put cooled crackers on parchment paper and drizzle with melted chocolate and then add sprinkles while chocolate is still soft.
- Store in air tight container.
