Rich, buttery Toffee Blondies are a great gift for any occasion. The gift jars are so easy to make. Just layer the ingredients in the order given, packing each down tightly. So easy but they look spectacular! If you want to add to your gift, tie a small whisk or rubber spatula to the jar. Perhaps the recipient will be a new cook and would appreciate an 8x8 baking pan or a can of cooking spray. Classic Oreo Truffles
Oreo Truffles can be made from plain chocolate Oreos, golden oreos or a flavored filling Oreo. My favorite is a mint filled Oreo Truffle dipped in chocolate. This was a special request so it is a Peanut Butter Chocolate Oreo dipped in chocolate. Pretty darn good! Be sure to use original Oreos -- not the Double Stuff filling. And yes, any brand you like is okay. (But would you have looked again if the title was Sandwich Cookie Truffles???) If you want to add sprinkles or chopped nuts to the top of the dipped balls, do it while the chocolate is still warm so they will stay in place. I am always confused by graham cracker measurements. Different brands package their crackers differently. What this recipe refers to are the crackers packaged in little 8 cracker squares – that are actually square. Other brands have rectangular crackers and people call them squares. But there IS a difference! Rectangles have two long sides and squares have sides the same length. Ask the little school person in your life! Those rectangles contain TWO squares each. To break crackers, grasp each cracker along the perforation firmly with all four fingers on the bottom and the base of the thumb and the thumb itself on top. Snaps cleanly. Use the paste colors because they give deeper color without adding extra liquid. It’s no secret that I am not good at dipping things in chocolate! (Remember? How not to make peppermint patties and Chocolate covered Cheeseballs) I frosted half of each cookie with the melted chocolate instead of dipping. Butterscotch Pecan Softies are a nice change of pace. Not sweet, a nice mellow butterscotch flavor and an interesting texture. If you can, mix it up and let it chill overnight in the refrigerator. That lets the flavors meld and develop to a mellow butterscotch. Toasting the pecans deepens the flavor. Just be careful with multitasking while the pecans are toasting in a skillet.
