Eggnog Sandwich Cookies are a unique holiday treat. The nutmeg and ginger sugar topping, the soft cookie, the creamy filling -- all the eggnog flavors in your hand. The dough is soft and a little sticky, even after chilling. Just do the best you can to make round cookies. Flatten them with a drinking glass (patterned bottom optional) dipped in flour so they are even height all the way across. When baking, watch the time so cookies just begin to turn golden when you remove them from the oven. (Some of mine got a little too brown this time!) I liked this recipe for Butter Fluff Cookies because it includes butter and cream cheese and tastes like a rich,fluffy cloud. It is also quick and easy and you can vary it in so many ways. Like this: Variation 1 - 3: Rolled in red sanding sugar before baking, green and red sprinkles mixed into the dough before baking, rolled in tiny green candy balls before baking. Buttery Brownie Bark
For a brownie lover, brownie bark seemed a no brainer. Who wouldn’t go for that rich chocolate brownie taste in a different form? Especially with toffee on one pan full and slivered almonds on the other. Turns out Bytes was not a fan. He had his mouth set for the rich chocolate flavor, but also for the fudgy texture. What he got was crisp and crunchy. He felt cheated. I didn’t care because I got chocolate and crunch, both of which are high on my list. Chocolate Peppermint Grahams – No Bake Treat
I am always confused by graham cracker measurements. Different brands package their crackers differently. What this recipe refers to are the crackers packaged in little 8 cracker squares – that are actually square. Other brands have rectangular crackers and people call them squares. But there IS a difference! Rectangles have two long sides and squares have sides the same length. Ask the little school person in your life! Those rectangles contain TWO squares each. To break crackers, grasp each cracker along the perforation firmly with all four fingers on the bottom and the base of the thumb and the thumb itself on top. Snaps cleanly.
